Baking | Cookie Dough Sandwiches

Even though I usually eat clean, I do like to treat myself every so often with something a little bit naughty & indulgent and I have such a sweet tooth so cookies are always a winner for me!

I was looking for something sweet to bake & take to one of my bridesmaid barbecue tonight and I stumbled across Helens Blog 'TheLovecatsinc' - all of her baking creations look amazing but when I saw these chocolate chip cookie dough sandwiches, I had to get baking right away!

Things you will need

For the cookies (makes 14 sandwiches)
250g plain flour
1 tsp baking soda
Pinch of salt
170g Unsalted butter
150g Light brown sugar
50g Granulated sugar
1 large egg
2 tsp Vanilla
180g chocolate chips

For the frosting
115g Unsalted butter
150g Light brown sugar
1tsp Vanilla
125g Plain flour
Pinch of salt
30ml Milk
180g chocolate chips

Step1 | Cookies | 1 Begin by beating the butter in a large bowl, until smooth & creamy. 2. Add in both the sugars, mixing well until combined. 3. Mix in the beaten egg and the vanilla. 4. In a separate bowl mix the flour, baking soda and the salt. 5. Slowly add the dry mix into the wet mix and combine - it may be quite thick but don't worry! 6. Mix in the chocolate chips thoroughly and evenly. 7. Wrap the cookie dough in cling wrap and leave to refrigerate for around 1 hour.

Step 2 | Frosting | 1.Beat the butter until smooth and creamy. 2. Add in the sugar and mix well. 3. Add the vanilla, the flour and the salt and combine thoroughly. 4. Add in the milk and gently combine. 5. Fold in the chocolate chips - yummy!

Step3 Sandwiches | 1. Preheat the oven to 350F/180C. 2. Remove the dough from the fridge and allow to sit at room temperature for 10 minutes. 3. Line a baking tray with parchment paper. 4. Place Tablespoon sized balls of dough onto the tray - spread evenly apart so they don't join up. 5. Bake for 8-10 minutes or until just golden. 6. Allow the cookies to cool on the tray for 5 minutes (they will be very soft). 7. Transfer to  cooling rack and allow to cool completely. 8. Sandwich a liberal amount of the frosting between 2 cookies and enjoy!

These Cookies are super yummy and so squishy and fun! They take a little more time to make than regular cookies but they are totally worth the wait. 
The combination of the crispy outer of the cookie, the chewy inner of the cookie and the squishy goodness of the frosting is just heaven! This is the best cookie recipe I have ever used and I will happily use it again & again!
